WHAT IS A GREASE-LINE?

Your grease trap (or interceptor) is part of a larger interdependent system of piping and equipment that functions together called the grease-line. Bluestem is the only provider that manages all three components.

Three Components of A Grease-Line

(1) Food Prep Piping | the floor drains and piping under the food preparation area that lead to the grease interceptor

(2) Grease Interceptor | the grease interceptor itself

(3) Sewer Lateral | the sewer lateral, or piping after the grease interceptor up to the connection to the city sewer main

Note: The grease-line does not include any piping in non-food-service areas, including bathrooms and dining areas.

What is PEAK/100™?

A grease-line is sized only once, during initial construction of the restaurant. While the grease-line is in service, it is common for all kinds of changes to occur:

  • An entirely new restaurant concept moves into the space

  • The menu changes

  • Number of customers served goes up or down

The result is that most grease-lines are out-of-sync with the kitchen they are serving. Due to cost, it is not feasible to tear out and install a new grease-line. The only viable option is to get the existing equipment operating at it’s peak efficiency as often as possible, with the target being 100% of the time. A grease-line operating at PEAK/100™ is free of clogs, smells, overflows, and is in compliance with local codes.
